Chocolate Cake Recipe

Ingredients:

· Butter cake mix 370g

· Sugar 660g

· Eggs 6

· Vanilla 2 teaspoon

· Flour 600g

· Baking soda 21/2 teaspoon

· Cocoa powder 180g

· Butter milk 560g

STAGE 1

Preheat your oven to a moderate temperature or blue flame for about 20 mins.

STAGE 2

Cream your butter and sugar with a cake mixer until its light and cream. Then add the vanilla essence and beat in the egg one at a time.

STAGE 3

Mix the sifted flour, baking soda and cocoa powder. Then add the buttermilk and stir till smooth. Pour batter into a baking pan and bake for 90 mins.

HOW TO MAKE BUTTERMILK

Ingredients:

· Lemon juice or Vinegar 2 table spoon

· Butter 250g

· Milk 250g

STEP: Mix lemon juice or vinegar, butter and milk in a bowl and allow to set. Mixture can last up to one week in the freezer.

Akara Pancake Recipe (Pankara)

Ingredients:

· Peeled beans 1 cup

· Eggs 2

· Water ½ cup

· Salt to taste

· Chopped pepper and onion

· Vegetable or palm oil

STAGE 1

Blend the beans with the ½ cup of water to form a thick paste.

Add in all leftover ingredients except oil and mix well.

STAGE 2

Place a small frying pan on medium heat and add a little bit of oil.

Scoop some batter into the frying pan and fry till you notice bubbles.

STAGE 3

Flip over and allow to fry till golden.

Repeat process till all the batter is exhausted.

Serve with pap or drip tomato and pepper sauce on pankara.

Ukodo (Yam Pepper Soup Recipe)

Ingredients:

· Yam

· Chopped meat (goat meat is preferable)

· Chopped chicken

· Smoked fish

· Ground dry pepper

· Ground crayfish

· Ground fresh pepper

· Ground pepper soup spices

· Salt

· Seasoning cube

· Red oil

· Water

STAGE 1

Peel yam and cut into medium chunks and set aside.

Wash and boil the meat and chicken adding salt.

STAGE 2

Carefully add the yam to the boiling meat.

Add your smoked fish, pepper, crayfish, pepper soup spices, seasoning cubes and more water.

Let it boil till yam is cooked.

STAGE 3

Serve in a soup bowl and serve red oil on a separate dish.
